About The Process:
Only the sweetest cherry – those with a Brix score above 18 – are handpicked in the honey process. After that, the cherries are sifted to remove any that haven’t fully matured. After that, the fruit is pulped without the use of water. Pulping is done so that some mucilage remains on the inner parchment. The initial step of drying takes three days in the sunshine. The drying process is then carried out on raised beds in the shade to slow down the process and limit the influence of the sun. Before being delivered to the mills, the coffees are kept and allowed to rest for 30 days.
