Koffie Genetic Insight
Catuaí derives from the Guarani multo mom, meaning “very good”. Today, it is considered to have very good cup quality. It is a cross between highly productive Mundo Novo and compact Caturra, made by the Instituto Agronomico (IAC) of Sao Paulo State in Campinas, Brazil. The plant is highly productive compared to Bourbon, in part because of its small size, which allows plants to be closely. The variety was released in Brazil 1972 after pedigree selection (selection of individual plants through successive generations) This is a Red Catuaí planted at Ratnagiri Estate.
PARADISE
It is an Anaerobic Pineapple Fermented coffee from the renowned Ratnagiri Estate produced with all the care by Mr. & Mrs Parte in the beautiful mountain range of Chikmagalur, Karnataka. For this Lot, the ripest coffee cherries were harvested with an average Brix reading of 23.8. After removal of floats these cherries were placed in stainless steel tanks, fresh pineapple was cut into pieces and to the tank along with water all the oxygen was purged out of the tanks. Where the coffee was subjected to anaerobic fermentation for 60 hours.
After undergoing anaerobic fermentation these coffees were pulped and were put on raised beds under the watch of The Commander Mr. Ashok Parte, these coffees were dried under the shade, constant stirring on the raised beds was done to ensure uniform drying. Rested for 3 months before the coffee is milled, packed and sent to Koffie Genetics HQ. The Aromatics is intense & sweet with characters of Candy, Mandarin, Strawberry & notes of Pineapple.
In the cup, the coffee is silky bodied with lots of fruit characters lingering on the palate. We found Strawberry, Orange Candy, and Papaya with Pineapple nuances as a bouquet with berry tones in the background.
The cup gets lively while cooling & body improves with a good malic acidity, finishes with soft milk chocolate & berry sweetness.
